Versatile Vegetable Stew
Easy to make
This hearty and adaptable vegetable stew is perfect for using up any veggies you have on hand! It’s packed with flavor, fiber, and is easy to make. Just toss in your favorite vegetables and enjoy a cozy, satisfying meal.
- Ingredients:
- 1 tbsp olive oil
- 1 onion, finely diced
- 2 leeks, sliced
- 2 carrots, diced
- 2 garlic cloves, finely diced
- 1 tsp sweet smoked paprika
- ½ tsp dried thyme
- 2 potatoes, diced
- 600ml vegetable stock
- ½ head cauliflower, cut into small florets
- 200g fine green beans, chopped
- 1 x 400g tin baked beans
- 2 tbsp chopped flatleaf parsley
- Salt and freshly ground black pepper
- Crusty bread, to serve
- Method:
- Sauté Vegetables: Heat olive oil in a large pan, add onion and leeks, and cook until softened. Stir in carrots, garlic, paprika, and thyme; cook for 5 minutes.
- Simmer: Add potatoes and vegetable stock, bring to boil. Reduce heat, simmer for 5 minutes. Add cauliflower, continue simmering for 5 minutes.
- Add Green Veggies: Stir in green beans and baked beans; cook for 3 minutes. Mix in parsley and season with salt and pepper.
- Serve: Enjoy with crusty bread for a complete meal.
