Vegan Spicy Sausage Casserole

Looking for a hearty and flavorful meal that makes the most of your fridge leftovers? This Vegan Spicy Sausage Casserole is your new go-to! Packed with spices, veggies, and a mix of beans, it’s a delicious and satisfying option for any day of the week.
  • Ingredients:
  1. 2 tbsp oil
  2. 8 vegan sausages
  3. 1 onion, chopped
  4. 2 sticks celery, chopped
  5. 2 garlic cloves, chopped
  6. 2 peppers (red, yellow, or orange), chopped
  7. 1 tbsp chipotle paste or harissa paste
  8. 1 tbsp tomato purée
  9. 400g tin tomatoes or passata
  10. 300ml vegetable stock
  11. 1 tsp dried oregano
  12. 400g cooked beans or pulses (chickpeas, butter beans, black beans, etc.)
  13. Fresh parsley, chopped (to serve)
  14. Salt and pepper to taste
  15. Rice and salad (to serve)
  • Method:
  1. Heat 1 tbsp oil in a casserole dish. Brown the sausages, then set aside.
  2. In the same dish, sauté onion, celery, garlic, and peppers in the remaining oil until softened.
  3. Stir in chipotle or harissa paste, tomato purée, tomatoes (or passata), stock, and oregano. Simmer and add the sausages.
  4. Season with salt and pepper, and cook for 15–20 minutes until sausages are cooked through and sauce thickens.
  5. Add beans, cook for 5 more minutes, and adjust seasoning.
  6. Garnish with parsley and serve with rice and salad.
