Vegan Spicy Sausage Casserole

Looking for a hearty and flavorful meal that makes the most of your fridge leftovers? This Vegan Spicy Sausage Casserole is your new go-to! Packed with spices, veggies, and a mix of beans, it’s a delicious and satisfying option for any day of the week.
- Ingredients:
- 2 tbsp oil
- 8 vegan sausages
- 1 onion, chopped
- 2 sticks celery, chopped
- 2 garlic cloves, chopped
- 2 peppers (red, yellow, or orange), chopped
- 1 tbsp chipotle paste or harissa paste
- 1 tbsp tomato purée
- 400g tin tomatoes or passata
- 300ml vegetable stock
- 1 tsp dried oregano
- 400g cooked beans or pulses (chickpeas, butter beans, black beans, etc.)
- Fresh parsley, chopped (to serve)
- Salt and pepper to taste
- Rice and salad (to serve)
- Method:
- Heat 1 tbsp oil in a casserole dish. Brown the sausages, then set aside.
- In the same dish, sauté onion, celery, garlic, and peppers in the remaining oil until softened.
- Stir in chipotle or harissa paste, tomato purée, tomatoes (or passata), stock, and oregano. Simmer and add the sausages.
- Season with salt and pepper, and cook for 15–20 minutes until sausages are cooked through and sauce thickens.
- Add beans, cook for 5 more minutes, and adjust seasoning.
- Garnish with parsley and serve with rice and salad.
