Turkish Flatbread with Minced Beef, Herbs, and Spices

Ingredients: For the topping:
- 1 tbsp extra virgin olive oil
- 250g/9oz beef or lamb mince
- 1 tsp ground cumin
- 1 tsp garam masala
- 1 tsp hot smoked paprika
- 2–3 tsp tomato purée
- ½ tsp fine sea salt
- Fresh mint and coriander leaves, to serve
For the dough:
- 200g/7oz Greek-style yoghurt
- 200g/7oz self-raising flour
- 1 tsp ground cumin
- 1 tsp cumin seeds
For the minted yoghurt:
- 4 tbsp Greek-style yoghurt
- 1 heaped tbsp finely chopped fresh mint leaves
Method:
- Preheat & Prep:
Preheat your oven to 220C/200C Fan/Gas 7. Lightly oil a large baking tray and heat it in the oven. - Make the Dough:
Combine all dough ingredients in a large bowl with salt and pepper. Knead lightly on a floured surface and roll into an oval shape, roughly 32x22cm/12½x8½in. - Bake the Flatbread:
Place the dough on the hot baking tray, drizzle with oil, season with pepper, and bake for 8–10 minutes until puffed up and browned. - Cook the Topping:
In a large frying pan, cook the mince with spices, salt, and pepper over medium heat for 3–4 minutes. Stir in the tomato purée and cook for another minute. - Assemble & Finish:
Spread the cooked mince mixture on the baked flatbread, drizzle with oil, and return to the oven for 2 more minutes. - Make the Minted Yogurt:
Mix yoghurt with finely chopped mint, a pinch of salt, and a tablespoon of cold water. - Serve:
Drizzle the flatbread with minted yogurt, scatter with fresh mint and coriander leaves, and enjoy!
