Ingredients:

  • 1 tbsp extra virgin olive oil, plus extra for drizzling
  • 2 large garlic cloves, thinly sliced
  • 400g tin chickpeas, drained
  • 400g tin chopped tomatoes
  • 400ml/14fl oz chicken stock
  • 50g/1¾oz small pasta shapes
  • Freshly ground sea salt and black pepper to taste

Method:

  1. Sauté the Garlic:
    Heat the olive oil in a medium saucepan over medium heat. Add the thinly sliced garlic and cook gently until softened and just beginning to brown.
  2. Add Chickpeas & Tomatoes:
    Stir in the drained chickpeas, then add a generous pinch of salt and pepper. Pour in the chopped tomatoes and chicken stock, and bring the mixture to a boil.
  3. Cook the Pasta:
    Add the pasta shapes to the soup, then reduce the heat and let it simmer for about 15 minutes, or until the pasta is tender.
  4. Season & Serve:
    Taste the soup and adjust the seasoning as needed. Ladle into bowls, drizzle with a bit of extra virgin olive oil, and top with fresh herbs if you have them. Enjoy this simple yet satisfying dish!
