For the Pastry:
- 100g/3½oz unsalted butter, softened
- 50g/1¾oz icing sugar
- 2 free-range egg yolks
- 200g/7oz plain flour, plus extra for dusting
- ¼ tsp fine salt
For the Crème Pâtissière:
- 300ml/½ pint full-fat milk
- 1 tsp vanilla bean paste
- Pinch salt
- 2 free-range egg yolks
- 50g/1¾oz granulated sugar
- 2 tbsp cornflour
- 30g/1oz unsalted butter
To Decorate:
- 500g/1lb 2oz small strawberries, hulled and halved
- 1 tbsp caster sugar
- Method:
- Prepare the Pastry: Blitz butter and icing sugar until combined. Add egg yolks, then flour and salt. Form dough into a disc, chill for 30 minutes.
- Make the Crème Pâtissière: Heat milk, vanilla, and salt until steaming. Mix egg yolks, sugar, and cornflour, then whisk in hot milk. Cook until thickened, stir in butter, cool, and chill.
- Bake the Tart Shell: Roll out dough, line tart tin, chill, then blind bake with baking beans. Remove beans and bake until golden and crisp. Cool.
- Assemble the Tart: Mix strawberries with caster sugar. Spread crème pâtissière in cooled pastry case. Decorate with strawberries in concentric circles.
