Impressive Strawberry Tart

Elevate your dessert game with this stunning Strawberry Tart! Perfect for special occasions or a delightful treat, this tart is a showstopper with its creamy crème pâtissière and fresh, juicy strawberries. It may take some time, but the end result is totally worth it!
  • Ingredients:
For the Pastry:
  1. 100g/3½oz unsalted butter, softened
  2. 50g/1¾oz icing sugar
  3. 2 free-range egg yolks
  4. 200g/7oz plain flour, plus extra for dusting
  5. ¼ tsp fine salt
For the Crème Pâtissière:
  1. 300ml/½ pint full-fat milk
  2. 1 tsp vanilla bean paste
  3. Pinch salt
  4. 2 free-range egg yolks
  5. 50g/1¾oz granulated sugar
  6. 2 tbsp cornflour
  7. 30g/1oz unsalted butter
To Decorate:
  1. 500g/1lb 2oz small strawberries, hulled and halved
  2. 1 tbsp caster sugar
  • Method:
  1. Prepare the Pastry: Blitz butter and icing sugar until combined. Add egg yolks, then flour and salt. Form dough into a disc, chill for 30 minutes.
  2. Make the Crème Pâtissière: Heat milk, vanilla, and salt until steaming. Mix egg yolks, sugar, and cornflour, then whisk in hot milk. Cook until thickened, stir in butter, cool, and chill.
  3. Bake the Tart Shell: Roll out dough, line tart tin, chill, then blind bake with baking beans. Remove beans and bake until golden and crisp. Cool.
  4. Assemble the Tart: Mix strawberries with caster sugar. Spread crème pâtissière in cooled pastry case. Decorate with strawberries in concentric circles.
  5. Serve: Slice and enjoy this beautiful and delicious tart!
