Ingredients:

  • 3-4 large boneless skinless chicken breasts
  • 1/2 cup honey
  • 1/2 cup low sodium soy sauce
  • 1/4 cup hoisin sauce
  • 2 1/2 tablespoons minced garlic
  • 1-2 teaspoons sriracha sauce (adjust to taste)
  • 2 tablespoons cold water
  • 1 tablespoon corn starch
  • Chopped green onions (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Place the chicken breasts in the slow cooker.
  2. Make the Sauce:
    • In a medium bowl, whisk together the honey, soy sauce, hoisin sauce, minced garlic, and sriracha sauce. Pour this mixture over the chicken in the slow cooker.
  3. Cook:
    • Cover and cook on high for 3-4 hours or on low for 6-8 hours.
  4. Shred the Chicken:
    • Once cooked, use a slotted spoon to transfer the chicken to a large bowl. Shred the chicken using two forks.
  5. Thicken the Sauce:
    • Transfer the sauce from the slow cooker to a medium saucepan. Bring to a boil.
    • In a small bowl, stir together the cold water and corn starch until dissolved. Add this mixture to the saucepan and stir until the sauce has thickened. Remove from heat.
  6. Combine:
    • Pour the thickened sauce over the shredded chicken. Toss to coat.
  7. Serve:
    • Garnish with chopped green onions and serve with cooked rice.
