Sausage, Squash, and Apple Traybake

Looking for a simple, hearty meal that everyone will love? This Sausage, Squash, and Apple Traybake combines the sweetness of butternut squash and apples with the savory goodness of sausages, all tied together with a delicious honey-mustard glaze. Perfect for cozy evenings or a relaxed weekend dinner!

Ingredients:

  • 1 small butternut squash (about 750g/1lb 10oz), quartered and sliced
  • 2 red onions, sliced into rings
  • 2 apples, unpeeled, cored, and sliced
  • 12 pork sausages
  • 3 tbsp olive oil
  • 1 tbsp runny honey
  • 1 tsp English mustard
  • Salt and freshly ground black pepper to taste
  • 15g/½oz fresh flatleaf parsley, finely chopped (optional, for garnish)

Method:

  1. Preheat the Oven:
    Set your oven to 220C/200C Fan/Gas 7.
  2. Prepare the Ingredients:
    Slice the butternut squash into 5mm/¼in slices, leaving the peel on, and remove the seeds.
  3. Roast the Base:
    Arrange the squash, onion rings, apple slices, and sausages on a large baking tray. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and roast for 20 minutes.
  4. Create the Glaze:
    While the base is roasting, whisk together the honey, mustard, and remaining olive oil in a small bowl.
  5. Glaze and Finish:
    After 20 minutes, drizzle the honey-mustard glaze over the sausages and vegetables. Toss everything to ensure even coating. Return the tray to the oven and roast for an additional 10 minutes, or until the sausages are browned and cooked through, and the vegetables are tender.
  6. Serve:
    Garnish with chopped parsley, if desired, and serve hot. Enjoy this comforting dish with the family!
