- Ingredients:
- 1 tbsp sunflower oil
- 8 spicy pork sausages
- 4 rashers smoked bacon, finely chopped
- 1 onion, sliced
- 1 red pepper, cut into large chunks
- 1 large carrot, diced
- 1 garlic clove, crushed
- 300ml/½ pint chicken stock
- 400g tin chopped tomatoes
- 2 tbsp sun-dried tomato purée
- 2 fresh thyme sprigs
- 250g/9oz baby new potatoes, sliced into thick discs
- Salt and freshly ground black pepper
- Freshly cooked green vegetables, to serve
- Method:
- Brown the Sausages: Heat oil in a large pan. Fry sausages until browned, then set aside.
- Cook the Bacon: Fry bacon until crispy. Remove and set aside with sausages.
- Sauté the Veggies: Add onion, red pepper, carrot, and garlic to the pan. Cook for 5 minutes.
- Simmer Together: Add stock, tomatoes, tomato purée, and thyme. Bring to a boil. Add potatoes, then return sausages and bacon to the pan. Cover and simmer for 20 minutes, then uncover and simmer for an additional 10 minutes.
Serve: Enjoy with freshly cooked green vegetables for a complete, colorful meal!
