Salmon and Broccoli Pasta

  • Ingredients:
  1. 150g dried pasta (any kind)
  2. 150g broccoli, cut into small florets
  3. 1 tbsp olive oil
  4. 4 spring onions or ½ small onion, finely sliced
  5. 2 skinless salmon fillets, cut into 3cm chunks
  6. A pinch of dried chilli flakes (optional)
  7. 100ml double cream
  8. Zest of ½ small lemon
  9. Salt and freshly ground black pepper
  • Method:
  1. Cook Pasta and Broccoli: Boil pasta in salted water. Add broccoli 3 minutes before pasta is done, then drain.
  2. Prepare Salmon: Sauté onions in olive oil until softened. Add salmon and chilli flakes, cook briefly, then stir in cream and a splash of pasta water. Simmer until salmon is cooked.
  3. Combine: Toss the drained pasta and broccoli with the creamy salmon sauce and lemon zest. Season to taste.
