Roasted Chicken Thighs with Garlic and Oregano

Ingredients:

  • 8 chicken thighs
  • 2 teaspoons salt
  • 6 garlic cloves (or more, if preferred)
  • 1 teaspoon dried oregano
  • 2 teaspoons ground red pepper
  • 3 tablespoons sunflower oil

Instructions:

  1. Prepare the Chicken:
    • Pat the chicken thighs dry with paper towels and place them in a deep container.
  2. Season the Chicken:
    • Crush 3 of the garlic cloves and mix them with salt, oregano, and ground red pepper.
    • Coat the chicken thighs thoroughly with the garlic-spice mixture. For added flavor, you can also crush additional garlic cloves and coat the chicken with them.
    • Add the sunflower oil to the container, mix well, and cover. Allow the chicken to marinate at room temperature for 1 hour.
  3. Preheat the Oven:
    • Heat the oven to 200°C (400°F).
  4. Roast the Chicken:
    • Arrange the marinated chicken thighs on a baking sheet. If desired, line the baking sheet with parchment paper for easy cleanup.
    • Place the remaining whole garlic cloves on the baking sheet around the chicken.
    • Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and golden brown.
  5. Serve:
    • Remove the chicken from the oven and let it rest for a few minutes before serving.
    • The garlic cloves will be infused with the chicken juices and can be used to make a flavorful garlic sauce if you like.

Tips:

  • Garlic Sauce: If you roast a whole head of garlic along with the chicken, you can squeeze the roasted garlic out of the cloves to create a delicious garlic sauce.
  • Cleanup: Using parchment paper on the baking sheet helps prevent sticking and makes cleanup easier.
