Looking for a comforting and flavorful side dish? This Roasted Cauliflower Cheese is just what you need! With a creamy sauce enhanced by roasted cauliflower and a hint of mustard, it’s the perfect addition to any meal. ✨
  • Ingredients:
  1. 1 large head cauliflower, cut into florets
  2. Sea salt and freshly ground black pepper
  3. 20g unsalted butter
  4. 20g plain flour
  5. 250ml skimmed milk
  6. 40g mature cheddar, finely grated
  7. 2 tsp Dijon mustard
  8. 15g Parmesan, finely grated
  9. Freshly grated nutmeg (optional)
  • Method:
  1. Preheat oven to 200°C/180°C Fan/Gas 6. Roast cauliflower for 20 minutes until tender and golden.
  2. Make the sauce: Melt butter, add flour, cook until golden. Gradually stir in milk, cook until thickened. Add nutmeg, mustard, and cheddar. Season to taste.
  3. Mix roasted cauliflower into the sauce, transfer to a dish, sprinkle with Parmesan, and bake for 10–15 minutes until bubbly and golden.
