Quick Fish Gratin

This Quick Fish Gratin is your go-to for a fast, flavorful, and low-calorie meal! With tender fish and a crispy topping, it’s perfect for a healthy dinner that doesn’t compromise on taste.
  • Ingredients:
  1. 20g cornflour
  2. 300ml semi-skimmed milk
  3. 300g mixed fish (smoked haddock, cod, salmon), thawed if frozen
  4. 50g baby spinach leaves
  5. Zest of ½ small lemon (optional)
  6. 1 thin slice white or brown bread
  7. 15g Parmesan, finely grated
  8. Sea salt and freshly ground black pepper
  9. 100g frozen peas (to serve)
  • Method:
  1. Prepare the Sauce: Mix cornflour with 3 tbsp of milk to form a paste. Heat the remaining milk in a non-stick saucepan, adding fish, spinach, and lemon zest (if using). Season with salt and pepper. Simmer gently for 3–4 minutes, until fish starts to flake.
  2. Thicken the Sauce: Stir in the cornflour paste and cook for 1 minute until thickened. Spoon into a flameproof dish or individual pie dishes.
  3. Add Topping: Preheat the grill to high. Tear bread into small pieces, toss with Parmesan, and scatter over the fish mixture. Grill for about 2 minutes until the topping is golden and crisp.
  4. Cook Peas: Boil peas according to packet instructions, then drain.
Serve this delicious gratin with peas for a satisfying meal that’s both quick and healthy!
