Ingredients:
- 200g/7oz red lentils
- 2 sweet potatoes, peeled and diced
- 1 tsp ground turmeric
- 1 litre/1¾ pints hot vegetable stock (made from 2 stock cubes)
- 100g/3½oz spinach
- 2 tbsp sunflower oil
- 2 tsp cumin seeds
- 1 tsp crushed chillies
- Salt and freshly ground black pepper
- 1 lemon, cut into wedges (for serving)
Method:
- Prep & Cook:
- In a large microwavable bowl, combine the lentils, sweet potatoes, turmeric, and a pinch of salt. Stir in the hot stock, cover, and microwave on high for 15 minutes, or until the lentils are tender.
- Stir in the spinach and let it sit for 4–5 minutes to wilt.
- Make the Spiced Oil:
- In a small microwavable bowl, combine the sunflower oil, cumin seeds, and crushed chillies. Cover and microwave on high for 2 minutes, or until fragrant.
- Finish & Serve:
- Stir the dal and season with salt and pepper. Spoon over the spiced oil and serve with lemon wedges for a zesty finish.
