One-Pan Mushroom & Leek Orzo

Ingredients:
- 2 tbsp olive oil, plus 1 tbsp extra to serve
- 250–300g/9–10½oz mushrooms, sliced
- 2 medium leeks, trimmed and thinly sliced
- 400g/14oz orzo pasta
- 1 vegetable or chicken stock cube
- Salt and black pepper
Method:
- Sauté the Veggies:
- Heat 2 tbsp olive oil in a large saucepan over medium heat. Add sliced mushrooms and leeks, season with a pinch of salt and lots of black pepper, and fry for 5 minutes, stirring regularly.
- Add Orzo:
- Stir in the orzo and cook for a few seconds more.
- Cook the Orzo:
- Pour in 1.2 liters/2 pints of water, crumble in the stock cube, and bring to a boil. Cook for about 12 minutes until the orzo is soft and the sauce is thick and glossy, like a risotto. Stir regularly, especially towards the end, and add a splash more water if needed.
- Finish & Serve:
- Serve hot, topped with an extra drizzle of olive oil and a sprinkle of black pepper.
