No-Bake Strawberry Cheesecake

Here’s a delightful recipe for a No-Bake Strawberry Cheesecake that’s perfect for summer. This dessert combines creamy white chocolate with fresh strawberries for a refreshing treat.
  • Ingredients:
  1. 2 tsp sunflower oil
  2. 200g (7oz) digestive biscuits
  3. 100g (3½oz) unsalted butter
  4. ½ tsp ground cinnamon
  5. 100g (3½oz) white chocolate, roughly chopped
  6. 400g (14oz) strawberries, trimmed (plus extra for decoration)
  7. 300g (10½oz) full-fat cream cheese
  8. 1 tsp vanilla extract
  9. ½ unwaxed lemon, finely grated zest
  10. 1 tbsp runny honey or maple syrup
  11. 200ml (7fl oz) double cream
  • Method:
Prepare the Tin:
Brush the inside of a 20cm (8in) springform tin with sunflower oil and line the base with a disc of baking parchment.
Make the Base:
Place the digestive biscuits into a sealable freezer bag, push out the air, seal, and crush with a rolling pin until you get fine crumbs.
Melt the butter in a large saucepan, then stir in the biscuit crumbs and cinnamon.
Press the crumb mixture into the bottom of the prepared tin and chill in the refrigerator for 30 minutes.
Prepare the Strawberries:
Chop 150g (5oz) of the strawberries in half lengthwise and arrange them around the edge of the tin, cut side-up.
Chop the remaining strawberries into small pieces.
Melt the Chocolate:
Melt the white chocolate in a heatproof bowl over a pan of simmering water (making sure the bowl doesn’t touch the water) or in the microwave.
Make the Filling:
Beat together the cream cheese, vanilla extract, lemon zest, and honey in a mixing bowl.
Stir in the chopped strawberries.
In another bowl, whisk the double cream until it holds a floppy peak.
Fold the melted chocolate into the cream cheese mixture, followed by the whipped cream. Adjust sweetness with more honey if needed.
Assemble the Cheesecake:
Spoon the filling into the tin over the strawberries, spreading it level with a palette knife or the back of a spoon.
Cover with cling film and chill overnight, or until firm.
Serve:
Carefully remove the cheesecake from the tin and transfer it to a serving plate.
Decorate with sliced or quartered extra strawberries on top.
