Ingredients:
- 2 sweet potatoes, washed and dried
For the Smoked Mackerel Filling (2 portions):
- 75g/2½oz smoked mackerel, skinned and mashed
- 3 tbsp half-fat crème fraîche or soured cream
- 2 spring onions, thinly sliced
- ½ unwaxed lemon, finely grated zest
- Freshly ground black pepper
For the Pea and Feta Filling (2 portions):
- 100g/3½oz frozen peas
- 100g/3½oz feta
- 2 tbsp plain yogurt
- 1 tbsp finely chopped fresh mint
- Freshly ground black pepper
For the Veggie Chilli Filling (4 portions):
- ½ red pepper, diced
- 400g tin kidney beans in chili sauce
- 198g tin sweetcorn in water
- 1 tbsp fresh lime juice
- 50g/1¾oz mature Cheddar, grated
- 4 tbsp soured cream
- Fresh coriander, to garnish
- 1 lime, cut into wedges
Method:
- Cook the Sweet Potatoes:
- Prick the sweet potatoes with a fork and microwave on high: 5–6 minutes for one or 7–8 minutes for two. Test for softness with a skewer. If needed, cook longer in 30-second intervals.
- Prepare the Fillings:
- Smoked Mackerel: Mix mackerel, crème fraîche, spring onions, lemon zest, and black pepper.
- Pea and Feta: Microwave peas for 2–3 minutes, then mash and mix with feta, yogurt, mint, and black pepper.
- Veggie Chili: Cook red pepper for 1½–2 minutes. Add beans, sweetcorn, and lime juice, then microwave for 4–5 minutes. Top with Cheddar and microwave for 1–2 minutes more. Finish with soured cream, coriander, and lime wedges.
- Assemble & Enjoy:
- Cut open the cooked sweet potatoes and fill with your chosen topping. Serve hot and enjoy!
