Meatloaf Roll

The ultimate comfort dish

Introducing the ultimate comfort dish: Meatloaf Roll! Imagine a delicious blend of meatloaf and sausage roll with a delightful surprise of hard-boiled eggs nestled inside. It’s a savory twist on classic comfort food that’s sure to impress!
  • Ingredients:
  1. 500g/1lb 2oz lean beef mince
  2. 6 sausages (removed from skins)
  3. 1 tsp chili flakes
  4. 1 tsp salt
  5. 2 garlic cloves, crushed
  6. 1 small onion, finely chopped
  7. 1 slice bread, blended into breadcrumbs (or 5 tbsp dried breadcrumbs)
  8. Large handful fresh parsley
  9. 5 hard-boiled eggs (boiled for 8 minutes, then cooled and peeled)
  10. 500g/1lb 2oz ready-rolled puff pastry
  11. 3 tsp yeast extract, mixed with 1 tsp warm water
  12. 1 free-range egg, beaten
  • Method:
  1. Prepare the Meat Mixture: Combine mince, sausagemeat, chili flakes, salt, garlic, onion, and breadcrumbs. Mix in parsley.
  2. Shape the Roll: Lay cling film on your worktop. Form the meat mixture into a rectangle, line up the hard-boiled eggs in the center, and use the cling film to shape it into a log. Chill in the fridge.
  3. Prepare the Pastry: Roll out the pastry and brush with the yeast extract mix. Remove the meat roll from the cling film and place it lengthwise on the pastry. Fold over the pastry, seal, and crimp the edges.
  4. Bake: Brush with beaten egg and bake in a preheated oven at 200°C/180°C Fan/Gas 6 for about 1 hour, or until golden-brown and cooked through.
