- 1 medium squash (e.g., acorn or butternut)
- Olive oil
- 1-2 sausages (your choice of flavor)
- 1 onion, chopped
- 2-3 garlic cloves, minced
- A handful of fresh spinach
- Parmesan cheese (optional, for a cheesy topping)
- Instructions:
- Prep the Squash: Cut and clean out the squash. Drizzle with olive oil and bake at 220°C/425°F for 40-45 minutes.
- Cook the Filling: While the squash is baking, brown the sausage with the onion and garlic in a skillet. Add spinach towards the end and cook until wilted.
- Assemble: Once the squash is baked, scoop out some of the flesh to make room for the filling. Stuff the squash with the sausage mixture.
- Final Bake: Bake for an additional 10 minutes. For a cheesy twist, sprinkle Parmesan on top and bake for another 10 minutes until golden.
