Hearty Butternut Squash Stew

Simple, Healthy, and Delicious

 

Looking for a comforting and nutritious meal that’s easy on the wallet and full of flavor? Try this Butternut Squash Stew! Perfect for busy days when you need something quick, healthy, and satisfying. Plus, it’s vegan if you use plant-based yoghurt!

Ingredients:

  • 2 tbsp vegetable or sunflower oil
  • 1 onion, finely chopped
  • 1 medium butternut squash (about 750g/1lb 10oz), peeled, deseeded, and cut into 2.5cm/1in pieces
  • 1 tsp dried chilli flakes
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 400g tin chopped tomatoes
  • 400g tin chickpeas, drained and rinsed
  • 300ml/½ pint boiling water
  • Plain yoghurt (any variety), to serve (optional)

Method:

  1. Cook the Onion:
    • Heat oil in a large saucepan and sauté the onion over medium heat for 5 minutes until softened.
  2. Add the Squash:
    • Add the butternut squash and cook on high for 8–10 minutes until it starts to color on the edges.
  3. Add Spices and Tomatoes:
    • Stir in salt, dried chilli flakes, cumin, cinnamon, chopped tomatoes, and 200ml boiling water. Cover and simmer on low for 30 minutes until the squash is tender.
  4. Add Chickpeas:
    • Stir in chickpeas and the remaining 200ml boiling water. Cover and cook on low for another 20 minutes. Let it rest for 5 minutes before serving.
  5. Serve:
    • Spoon into bowls and top with a dollop of plain yoghurt if desired.
