- Ingredients:
- 750g/1lb 14oz mixed summer fruit (raspberries, currants, blackberries, cherries, etc.)
- 185g/6½oz caster sugar
- 1 medium loaf of good-quality white bread, slightly stale
- 2 tbsp cassis or blackcurrant cordial
- Method:
- Prep the Fruit: In a pan, mix the fruit with sugar. Let sit covered for 3-5 hours or overnight to release juices. Gently heat until the mixture starts to boil, then simmer for 2-3 minutes. Stir in the cassis or blackcurrant cordial.
- Prepare the Bread: Cut the bread into thin slices and remove crusts. Dip one side of a round slice in the fruit juice and place it at the bottom of a pudding basin. Dip the remaining slices and place them around the edge of the bowl.
- Assemble the Pudding: Fill the lined basin with the fruit mixture. Top with more dipped bread slices, trimming any excess. Cover with a saucer and weigh it down. Chill in the fridge overnight.
- Serve: The next day, remove the weights and saucer. Invert the pudding onto a serving plate, slice, and enjoy with a splash of cream!
