Courgette Fritters with Mango Chutney Yoghurt

Looking for a quick and delicious vegetarian meal? These Courgette Fritters are perfect for a light lunch or dinner! Packed with flavor and served with a tangy mango chutney yoghurt, they’re a hit every time.
  • Ingredients:
  1. 120g courgette, coarsely grated
  2. ½ tsp sea salt
  3. 1 large free-range egg
  4. ½ tsp baking powder
  5. 3 tbsp plain flour
  6. 1½ tsp ground cumin
  7. 50g frozen peas, thawed
  8. Vegetable oil, for frying
  9. Freshly ground black pepper
For the Mango Chutney Yoghurt:
  1. 2 tbsp plain yoghurt
  2. 1 tsp mango chutney
  • Method:
  1. Season the grated courgette with sea salt and set aside.
  2. In a large bowl, whisk together the egg, baking powder, flour, and cumin. Season with black pepper.
  3. Squeeze the excess water from the courgette and add it to the batter along with the peas.
  4. Heat enough oil to cover the bottom of a frying pan over medium-high heat. Drop heaped tablespoons of the courgette mixture into the pan, flattening them with a spoon. Fry for 1–2 minutes on each side until golden-brown. Drain on kitchen paper if cooking in batches.
  5. For the dip, mix the yoghurt and mango chutney in a small bowl.
Serve the fritters with the mango chutney yoghurt and enjoy!
