Coconut, Turmeric & Yellow Split Pea Soup

Warm up with this nourishing vegan soup that’s as comforting as it is flavorful! Packed with turmeric, coconut, and hearty yellow split peas, this soup is a meal in a bowl, perfect for cozy family dinners.
- Ingredients:
- 2 tbsp vegetable oil
- 2 tsp cumin seeds
- 2 tsp black mustard seeds
- 1 brown onion, finely chopped
- 1 thumb-sized piece fresh ginger (or ¼ tsp ground ginger)
- 4 garlic cloves, crushed
- 2 tsp garam masala
- 1 tsp ground turmeric
- ½ tsp chilli powder
- 250g dried yellow split peas
- ½ vegetable stock cube
- 400ml tin coconut milk (or 100ml creamed coconut mixed with 300ml boiling water)
- A few handfuls of greens (like kale, swiss chard, or spinach)
- Salt, to taste
- Method:
- Toast Spices: Heat oil, toast cumin and mustard seeds until popping. Add onion and cook until golden.
- Flavor Base: Stir in ginger, garlic, garam masala, turmeric, and chilli powder. Cook briefly.
- Simmer: Add split peas, water, and crumbled stock cube. Bring to boil, then simmer with lid slightly ajar for 40-50 minutes.
- Finish: Stir in coconut milk and simmer until thickened. Add greens and cook until wilted.
