Coconut, Turmeric & Yellow Split Pea Soup

Warm up with this nourishing vegan soup that’s as comforting as it is flavorful! Packed with turmeric, coconut, and hearty yellow split peas, this soup is a meal in a bowl, perfect for cozy family dinners.
  • Ingredients:
  1. 2 tbsp vegetable oil
  2. 2 tsp cumin seeds
  3. 2 tsp black mustard seeds
  4. 1 brown onion, finely chopped
  5. 1 thumb-sized piece fresh ginger (or ¼ tsp ground ginger)
  6. 4 garlic cloves, crushed
  7. 2 tsp garam masala
  8. 1 tsp ground turmeric
  9. ½ tsp chilli powder
  10. 250g dried yellow split peas
  11. ½ vegetable stock cube
  12. 400ml tin coconut milk (or 100ml creamed coconut mixed with 300ml boiling water)
  13. A few handfuls of greens (like kale, swiss chard, or spinach)
  14. Salt, to taste
  • Method:
  1. Toast Spices: Heat oil, toast cumin and mustard seeds until popping. Add onion and cook until golden.
  2. Flavor Base: Stir in ginger, garlic, garam masala, turmeric, and chilli powder. Cook briefly.
  3. Simmer: Add split peas, water, and crumbled stock cube. Bring to boil, then simmer with lid slightly ajar for 40-50 minutes.
  4. Finish: Stir in coconut milk and simmer until thickened. Add greens and cook until wilted.
