Here’s how to make it:

Ingredients:

  • Cauliflower Gnocchi (Trader Joe’s recommended)
  • Chicken Sausage (4 pieces)
  • Fat-Free Half & Half (about 1 cup)
  • Feta Cheese (about 3 ounces)
  • Fresh Spinach
  • Parmesan Cheese (a few hearty shakes)
  • 2 Garlic Laughing Cow Cheese Wedges
  • Seasonings: Crushed red pepper, black pepper, garlic salt, basil, Italian seasoning

Recipe (Serves 2):

  1. Cook the Chicken Sausage:
    • Preheat oven to 400°F (200°C).
    • Place chicken sausage on a baking sheet. Bake for 10 minutes on each side, until fully cooked.
  2. Cook the Cauliflower Gnocchi:
    • While the sausage is cooking, heat a nonstick skillet over medium heat.
    • Add the whole bag of cauliflower gnocchi. Cook for 10-15 minutes, stirring occasionally, until golden brown and crispy.
  3. Prepare the Sauce:
    • In the same skillet, add nonstick cooking spray.
    • Pour in about 1 cup of fat-free half & half.
    • Add 3 ounces of feta cheese, a few hearty shakes of Parmesan cheese, and 2 Garlic Laughing Cow Cheese Wedges.
    • Season with crushed red pepper, black pepper, garlic salt, basil, and Italian seasoning. Stir until the cheese melts and the sauce thickens.
  4. Combine and Finish:
    • Add fresh spinach to the sauce and cook until wilted.
    • Slice the cooked chicken sausage and add it to the sauce along with the cooked cauliflower gnocchi. Mix until everything is well combined and heated through.
