Here’s how to make it:
  • Ingredients:
  1. ½ cauliflower head, smallest tender leaves reserved
  2. ½ broccoli head
  3. 10g butter
  4. 10g plain flour
  5. 1 tsp Dijon mustard
  6. 125ml/4fl oz full-fat milk
  7. 40g/1½oz cheddar, grated
  8. Salt and ground black pepper
  • Method:
  1. Prepare the Veggies: Break cauliflower and broccoli into florets and slice the stalks. Boil in salted water for 2 minutes until just tender. Drain and set aside.
  2. Make the Cheese Sauce: Melt butter in a small saucepan. Add flour and cook for 1 minute. Stir in mustard, then gradually add milk, whisking well. Boil for 1 minute until the sauce thickens. Stir in 30g cheese and season with salt and pepper.
  3. Grill or Bake: Preheat the grill to its highest setting. Place veggies in an ovenproof dish, pour over the sauce, and sprinkle with remaining cheese. Grill for 2 minutes until golden and bubbling. No grill? Just bake until bubbly!
