  • For the Caramel Drizzle:
    • 15-20 soft caramel candies
    • 2 tablespoons heavy cream

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the Cookie Dough:
    • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg and vanilla extract until fully combined.
    • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Gently fold in the diced apples.
  3. Bake the Cookies:
    • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
    • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers should still be soft.
    • Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  4. Prepare the Caramel Drizzle:
    • In a microwave-safe bowl, combine the caramel candies and heavy cream.
    • Microwave in 20-second intervals, stirring in between, until the caramels are melted and smooth.
    • Drizzle the melted caramel over the cooled cookies using a spoon or piping bag.
