Braised Steak with Gravy

Tender beef with a luscious gravy

  • Ingredients:
  1. 4 braising steaks (about 200g/7oz each)
  2. 3 tbsp sunflower oil
  3. 1 onion, halved and cut into wedges
  4. 1 garlic clove, crushed
  5. 500ml/18fl oz beef stock (made with 1 beef stock cube or fresh)
  6. 1 tbsp tomato purée
  7. 1 tbsp fresh thyme (or ½ tsp dried thyme)
  8. 1 bay leaf
  9. 1 tsp cornflour
  10. ½ tsp English mustard powder
  11. Salt and freshly ground black pepper
  • Method:
  1. Preheat the oven to 170C/150C Fan/Gas 3.
  2. Prepare the beef: Season steaks with salt and pepper. Heat 1 tbsp oil in a frying pan and brown steaks on both sides. Transfer to a large casserole dish.
  3. Cook the vegetables: Add more oil if needed and sauté onion until softened. Add garlic and cook for 1 more minute. Add to the casserole.
  4. Make the gravy: Pour over beef stock, add tomato purée, thyme, and bay leaf. Bring to a boil, cover, and cook in the oven for 1¼–1½ hours until beef is tender.
  5. Thicken the gravy: Mix cornflour and mustard powder with cold water until smooth. Stir into the casserole, season to taste, and simmer on the stovetop until the gravy thickens.
  6. Serve: Transfer steaks to plates and spoon over the rich gravy. Serve with your favorite sides, like chips or mashed potatoes.
