Perfect Apple Pie

Comforting treat

This classic apple pie recipe is perfect for making a delicious, homemade pie with a buttery, flaky crust and a warm, spiced apple filling. A deep pie dish ensures you can pack in plenty of those hot, fluffy apples. Serve with a scoop of vanilla ice cream for a comforting treat!
  • Ingredients
For the Filling:
  1. 5 oz (140g) golden caster sugar, plus 1 tbsp for sprinkling
  2. 1 tsp ground cinnamon
  3. 2 tbsp cornflour
  4. 600g (1 lb 5 oz) Bramley cooking apples, peeled, cored, and sliced
For the Pastry:
  1. 400g (14 oz) plain flour, plus extra for rolling
  2. 2 tbsp caster sugar
  3. Zest of 1 lemon
  4. 250g (10 oz) cold butter, cut into cubes
  5. 1 free-range egg, beaten with 2 tbsp cold water (for the dough)
  6. 1 free-range egg, beaten (for glazing)
  • Method
Prepare the Pastry:
  1. In a bowl, mix the flour, sugar, and lemon zest. Rub in the butter until the mixture resembles breadcrumbs. Add the beaten egg and stir until a dough forms.
  2. Set aside one-third of the pastry for the lid. Roll out the remaining pastry on a floured surface until it’s about the thickness of a pound coin and 5-7 cm (2-3 in) larger than the pie dish. Carefully lift the pastry over the rolling pin and place it into the pie dish.
  3. Press the pastry into the dish, ensuring there are no air bubbles. Chill in the fridge for a few minutes.
Preheat the Oven:
  1. Preheat your oven to 200°C (180°C fan)/Gas 6. Place a baking tray in the oven to preheat.
Make the Filling:
  1. In a large bowl, mix the sugar, cinnamon, and cornflour. Add the apples and toss to coat.
Assemble the Pie:
  1. Fill the pie dish with the apple mixture, heaping it above the edge. Brush the rim of the dish with beaten egg.
  2. Roll out the reserved pastry and cover the pie. Press the edges together to seal and trim off any excess. Crimp the edges with a fork or your fingers. Make a few small holes in the center for steam to escape. Brush the top with beaten egg.
  3. Re-roll the pastry trimmings, cut into leaf shapes, and arrange them around the edge of the pie. Glaze with more egg and sprinkle with a bit of sugar.
Bake:
  1. Place the pie on the preheated baking tray and bake for 45-55 minutes, or until golden brown and the apples are tender.
