Ingredients (Makes 12 larger or 15-18 smaller cookies):
- 2 overripe bananas (mashed, about 1 cup)
- ⅓ cup applesauce (homemade or store-bought)
- ½ cup dried cranberries
- 2 cups quick oats (or rolled oats)
- ¼ cup oat milk (or plant milk of choice)
Optional:
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions:
- Preheat Oven:
- Set to 350°F (175°C) and line 2 baking sheets with parchment paper or a silicone mat.
- Mix:
- In a large bowl, mash the bananas. Add applesauce, cranberries, oats, and oat milk. Stir well to combine. For extra flavor, mix in cinnamon and vanilla if desired.
- Form Cookies:
- Scoop heaping tablespoons of the mixture onto the prepared baking sheets. Flatten slightly with your fingers to ensure even thickness.
