Creamy Chicken with Spinach & Parmesan

Craving something rich and indulgent but still low in carbs? This Creamy Chicken with Spinach & Parmesan is your go-to dish! It’s a luscious, comforting meal that’s easy to make and packed with flavor. Perfect for a cozy dinner or a special treat!
Ingredients:
- Chicken breast, thinly sliced
- 1 cup heavy whipping cream
- 1 cup chicken broth
- ½ cup Parmesan cheese
- 1 garlic clove
- 1 small onion
- ½-1 cup chopped fresh spinach
- 2 tablespoons butter
- ½ tsp xanthan gum
- Seasonings of your choice (salt, pepper, cayenne, garlic powder, ground mustard, onion powder, paprika, celery seed)
Instructions:
- Cook the Chicken: Season and cook chicken breast in butter for 5-10 minutes on each side until done. Set aside.
- Sauté Onion & Garlic: In the same pan, cook sliced onion and garlic in the remaining butter until softened.
- Make the Sauce: Add chicken broth, let reduce slightly, then stir in heavy cream and Parmesan cheese until thickened. Add spinach and xanthan gum to thicken further.
- Combine & Serve: Return chicken to the pan, cook for 5 minutes, and serve hot!
Tip: Serve with a side of low-carb veggies or over cauliflower rice for a complete meal!
