Creamy Chicken with Spinach & Parmesan

Craving something rich and indulgent but still low in carbs? This Creamy Chicken with Spinach & Parmesan is your go-to dish! It’s a luscious, comforting meal that’s easy to make and packed with flavor. Perfect for a cozy dinner or a special treat!

Ingredients:

  • Chicken breast, thinly sliced
  • 1 cup heavy whipping cream
  • 1 cup chicken broth
  • ½ cup Parmesan cheese
  • 1 garlic clove
  • 1 small onion
  • ½-1 cup chopped fresh spinach
  • 2 tablespoons butter
  • ½ tsp xanthan gum
  • Seasonings of your choice (salt, pepper, cayenne, garlic powder, ground mustard, onion powder, paprika, celery seed)

Instructions:

  1. Cook the Chicken: Season and cook chicken breast in butter for 5-10 minutes on each side until done. Set aside.
  2. Sauté Onion & Garlic: In the same pan, cook sliced onion and garlic in the remaining butter until softened.
  3. Make the Sauce: Add chicken broth, let reduce slightly, then stir in heavy cream and Parmesan cheese until thickened. Add spinach and xanthan gum to thicken further.
  4. Combine & Serve: Return chicken to the pan, cook for 5 minutes, and serve hot!

Tip: Serve with a side of low-carb veggies or over cauliflower rice for a complete meal!
