- Ingredients:
- 2 garlic cloves
- 2 tbsp olive oil
- 1 x 400g tin plum tomatoes
- 400g/14oz self-raising flour, plus extra for dusting
- 80g/2¾oz mozzarella
- 4 chipolata sausages (optional)
- 4 handfuls of your favorite veggies (peppers, cherry tomatoes, sweetcorn, broccoli, onion, black olives)
- Salt and black pepper
- Method:
- Make the Sauce: Peel and finely slice the garlic. Fry in 1 tbsp olive oil until golden. Add plum tomatoes, breaking them up with a spoon. Simmer for 5 minutes, season with salt and pepper, then remove from heat.
- Prepare the Dough: Preheat oven to 220°C/200°C Fan/Gas 7. Rub a baking tray with olive oil. Mix flour and a pinch of salt in a bowl. Make a well, pour in 250ml water, and mix with a fork until dough forms. Knead on a floured surface until smooth and elastic. Divide into 4 and roll out into rounds or ovals.
- Assemble Your Pizza: Spread each dough base with tomato sauce, top with torn mozzarella, and (if using) sausagemeat. Add your favorite veggies. Drizzle lightly with olive oil.
- Bake: Place on the top shelf of the oven and bake for 10 minutes, or until golden and puffed up.
- Serve with a crunchy green salad for the perfect meal!
