  • Ingredients:

– 1/4 cup softened butter
– 1/2 cup brown sugar
– 2 cups fresh peaches, sliced into 1/2-inch slices
– 1-1/4 cups all-purpose flour
– 1-1/4 teaspoons baking powder
– 1/4 teaspoon salt
– 3/4 cup sugar
– 1/2 cup softened butter
– 1 large egg, at room temperature
– 1 teaspoon vanilla extract
– 1/2 cup buttermilk

  • Instructions:

1. Preheat the oven to 350°F (175°C). Grease a 9×2 inch pie dish or round cake pan.
2. In a small bowl, mix together softened butter and brown sugar. Spread the mixture evenly on the bottom of the prepared pan.
3. Arrange the peach slices in a pattern over the sugar mixture. Set aside.
4. In a medium bowl, whisk together the flour, baking powder, and salt.
5. In a large bowl, cream together the softened butter, sugar, and vanilla extract until light and fluffy. Add the egg and beat until well combined.
6. Gradually add the dry ingredients to the creamed mixture, alternating with buttermilk. Mix until just combined.
7. Spoon the batter over the peaches and spread it evenly.
8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the cake to cool in the pan for 10 minutes. Then, run a knife around the edges and carefully invert the cake onto a serving platter.
10. If any peach slices stick to the pan, gently lift them off and place them back onto the cake.
