  • Ingredients:

– Pork Tenderloin
– Olive oil (for marinating and searing)
– 1/2 onion, diced
– 8 garlic cloves, minced
– Rosemary (about 3 tablespoons)
– Oregano (1 tablespoon)
– Thyme (1 tablespoon)
– Red pepper flakes (to taste)
– 1.5 cups chicken broth
– 3 tablespoons honey
– Salt and pepper (to taste)
– Cornstarch (for thickening sauce)

  • Instructions:

1. Preheat the oven to 350°F (175°C).
2. In a bowl, mix together 2 tablespoons of olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper.
3. Marinate the pork tenderloin in the olive oil mixture for at least 12 hours.
4. In another bowl, mix the chicken broth and honey until well combined.
5. Heat a skillet over medium-high heat and add 2 tablespoons of olive oil.
6. Sear the marinated pork tenderloin on both sides for 2 minutes each until browned.
7. Cover the skillet with foil and transfer to the preheated oven.
8. Roast the pork tenderloin for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
9. Remove the skillet from the oven and transfer the pork tenderloin to a cutting board. Cover and let it rest.
10. In the same skillet with the drippings, add diced onion and minced garlic. Sauté for 1-2 minutes.
11. Add red pepper flakes and oregano to the skillet and cook for an additional minute.
12. Pour in the chicken broth and honey mixture, stirring well to combine. Bring the sauce to a simmer.
13. In a small bowl or ramekin, mix cornstarch with water to create a slurry. Gradually add the slurry to the simmering sauce, whisking continuously, until the sauce thickens.
14. Slice the rested pork tenderloin and return it to the skillet, spooning the sauce over the top.
