  • Ingredients for 4 servings:

– 4 bone-in, skin-on chicken thighs
– 2 teaspoons salt (for the chicken)
– 1 teaspoon pepper (for the chicken)
– 1 tablespoon oil
– 3 cloves garlic, chopped
– ½ onion, diced
– 1 tomato, diced
– 2 cups spinach (80 g)
– 2 cups heavy cream (480 mL)
– 1 teaspoon salt
– 1 teaspoon pepper
– ½ cup grated Parmesan cheese (55 g)
– 2 tablespoons fresh flat-leaf parsley, chopped

  • Preparation:

1. Season the chicken thighs with salt and pepper.
2. Heat oil in a skillet over medium-low heat.
3. Place the chicken thighs skin side down in the skillet and cook for about 13 minutes until the skin is crisp. Flip the chicken and cook for another 15 minutes until cooked through. Remove from the pan.
4. Add chopped garlic and diced onion to the skillet, stirring until onions are translucent. Stir in diced tomatoes and spinach until the spinach is wilted.
5. Pour in the heavy cream, salt, and pepper, and bring to a boil.
6. Add grated Parmesan cheese and chopped parsley, stirring until the sauce thickens slightly.
7. Return the chicken to the skillet, spooning the creamy sauce over the top.
8. Serve the Creamy Tuscan Chicken hot and savor every flavorful bite!
