  • Ingredients:

* 2 large flour tortillas
* ¼ cup pesto (divided in half)
* 1 cup cherry tomatoes (halved, divided in half)
* ½ lb sliced turkey (divided in half)
* 2 oz baby spinach (divided in half)
* 4 slices provolone cheese (halved)

  • Instructions:

 

1. Warm the Tortillas: Heat the tortillas in the microwave in 30-second intervals until they become flexible and easier to roll. Transfer them to a clean work surface.

2. Spread the Pesto: Divide the pesto evenly, spreading it over half of each tortilla.

3. Assemble the Pinwheels: Distribute the halved cherry tomatoes, sliced turkey, baby spinach, and halved provolone cheese evenly over the pesto-covered area of each tortilla.

4. Roll and Chill: Tightly roll up each tortilla, starting from the pesto-filled side. Wrap the rolled tortillas securely in plastic wrap and refrigerate for at least 30 minutes. This allows the filling to set and makes slicing easier.

5. Slice and Serve: Unwrap the chilled tortillas. To create bite-sized pieces, insert 6 toothpicks at 1-inch intervals along the seam of each roll. Use a sharp knife to carefully slice between the toothpicks, creating individual pinwheels.
