Spicy Pork Noodles

This stir-fry is a flavor explosion in a bowl! Tender ground pork tossed with fragrant sesame oil, fiery chile-garlic paste, and crisp scallions gets combined with perfectly cooked rice noodles for a satisfying and spicy meal that’s ready in under 30 minutes.

  • Ingredients:

 

* 14 oz flat rice noodles (410g) – such as pad thai noodles
* Boiling water (for soaking noodles)
* 2 tablespoons toasted sesame oil, divided + extra for serving
* 1 ½ lb ground pork (650g)
* 6 scallions, whites and light green parts minced, dark green parts thinly sliced
* Kosher salt (to taste)
* Freshly ground black pepper (to taste)
* 2 tablespoons chile-garlic paste, divided + extra for serving

 

  • Instructions:

 

1. Soak the Noodles: In a large bowl, combine the rice noodles with enough boiling water to cover them. Use tongs to gently separate the noodles to prevent clumping. Let the noodles soak for 5 minutes, or until softened. Reserve ¼ cup of the noodle soaking water before draining the noodles.

2. Cook the Pork and Scallions: Heat the sesame oil in a wok or large skillet over high heat. Add the ground pork and minced scallions. Season with salt and pepper. Cook for 6-8 minutes, stirring frequently to break up the pork with a wooden spoon, until browned.

3. Combine and Serve: Add the drained noodles, reserved soaking water, and the chile-garlic paste to the wok. Stir-fry until the noodles are evenly coated in the flavorful sauce.

4. Plate and Enjoy: Transfer the delicious stir-fry to serving bowls. Top with the thinly sliced scallion greens for a pop of color and freshness. Drizzle with additional sesame oil and chile-garlic paste on the side for those who like it extra spicy!
