  • Ingredients:

* 1 tablespoon olive oil
* 1.3 lbs boneless, skinless chicken breasts (cut into strips)
* Salt and freshly ground black pepper (to taste)
* 1 cup fresh green beans (trimmed)
* 1 cup cherry tomatoes (halved)
* ½ cup basil pesto

 

  • Instructions:

 

1. Cook the Chicken: Heat olive oil in a large pan over medium heat. Add the chicken strips and season with salt and pepper. Cook for 8-10 minutes, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the pan and set aside.

2. Sauté the Veggies: Add the green beans to the same pan and cook for 3-4 minutes, or until tender-crisp.

3. Assemble the Bowls: Return the cooked chicken strips to the pan with the green beans. Add the halved cherry tomatoes and the pesto. Stir everything together until well combined.

4. Serve or Store: Divide the pesto chicken and veggie mixture into 4 meal prep containers. Enjoy immediately for a delicious lunch, or store in the refrigerator for up to 4 days for easy grab-and-go meals throughout the week.
