  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced (optional)
  • 1 cup broccoli florets
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (or more to taste)
  • 1/2 teaspoon sesame oil
  • Salt and freshly ground black pepper to taste

For the Jasmine Rice:

  • 1 cup jasmine rice
  • 1 1/2 cups water
  • Pinch of salt

Instructions:

  1. Marinate the Beef: In a medium bowl, toss the sliced beef with cornstarch and soy sauce. Let marinate for at least 15 minutes, while you prepare the other ingredients.
  2. Cook the Jasmine Rice: In a small saucepan, combine the jasmine rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked through and fluffy. Set aside.
  3. Prepare the Vegetables: While the rice cooks, wash and chop the bell pepper (if using), broccoli florets, and onion. Mince the garlic.
  4. Heat the Wok or Pan: Heat the vegetable oil in a large wok or skillet over high heat until shimmering.
  5. Sear the Beef: Add the marinated beef to the hot pan and cook for 2-3 minutes, stirring constantly, until browned and cooked through. Remove the beef from the pan and set aside on a plate.
  6. Stir-Fry the Vegetables: Add the red bell pepper (if using) and onion to the pan and cook for 1-2 minutes, or until softened slightly.
  7. Add Broccoli and Garlic: Add the broccoli florets and minced garlic to the pan and cook for an additional 2-3 minutes, or until the broccoli is crisp-tender.
  8. Create the Sauce: In a small bowl, whisk together the chicken broth, brown sugar, rice vinegar, sriracha, and sesame oil.
  9. Pour the Sauce and Combine: Pour the sauce into the pan with the vegetables and stir to combine. Bring to a simmer for 1 minute.
  10. Return the Beef: Add the cooked beef back to the pan and toss to coat it with the sauce.
