Tuscan Spaghetti

A Flavorful Mediterranean Delight

Indulge in the rich and savory flavors of Tuscan Spaghetti. This dish combines juicy shrimp, sun-dried tomatoes, and spinach in a creamy, garlic-infused sauce that will transport your taste buds to the heart of Tuscany.

  • Ingredients for 4 servings

– 8 oz spaghetti (225 g)
– 2 tablespoons olive oil
– 1 lb shrimp (450 g), peeled and deveined
– Salt, to taste
– Pepper, to taste
– 4 cloves garlic, minced
– ½ teaspoon red pepper flakes
– 1 cup sun-dried tomatoes, chopped
– 1 cup heavy cream (240 mL)
– 1 cup chicken broth (240 mL)
– 1 cup grated Parmesan cheese (100 g)
– 2 cups fresh spinach (60 g)
– 1 tablespoon fresh basil, chopped
– 1 tablespoon fresh parsley, chopped

  • Preparation

1. Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove from the skillet and set aside.
3. In the same skillet, add the garlic and red pepper flakes. Cook until fragrant, about 1 minute.
4. Add the sun-dried tomatoes and cook for another 2 minutes.
5. Pour in the heavy cream and chicken broth. Bring to a simmer.
6. Stir in the Parmesan cheese until the sauce is smooth and creamy.
7. Add the spinach and cook until wilted.
8. Return the shrimp to the skillet and toss to coat in the sauce.
9. Add the cooked spaghetti to the skillet and toss to combine.
10. Garnish with fresh basil and parsley.
