Flavorful Fajita Parchment-Baked Chicken

Elevate your dinner routine with this Flavorful Fajita Parchment-Baked Chicken recipe. Bursting with vibrant colors and bold flavors, this dish features tender chicken breast smothered in zesty salsa and savory taco seasoning, nestled atop a bed of sliced peppers and onions. Wrapped in parchment paper and baked to juicy perfection, it’s a hassle-free meal that’s as easy to make as it is delicious to devour.

  • Ingredients for 1 serving:

– Parchment paper or aluminum foil, 12×18 inches (30.5 x 46 cm)
– 1 chicken breast
– ½ red pepper, sliced
– ½ yellow pepper
– ¼ red onion, sliced
– 3 tablespoons salsa
– 1 teaspoon taco seasoning
– 1 tablespoon Mexican cheese blend
– 1 tablespoon olive oil
– Salt, to taste
– Pepper, to taste

  • Preparation:

1. Preheat the oven to 400°F (200°C).
2. Fold the parchment paper in half, then open up.
3. Thinly slice the peppers and onion and lay them on one half of the parchment paper.
4. Drizzle olive oil over the peppers and onions, then sprinkle with salt and pepper.
5. Place the chicken breast on top of the peppers and onions. Season the chicken with taco seasoning, salt, and pepper. Spoon salsa over the chicken and top with Mexican cheese blend.
6. Fold the parchment paper over the chicken, then cinch the paper together by folding it over itself along the edges to create a sealed packet.
7. Place the packet on a baking sheet and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165˚F (75˚C).
8. Carefully open the parchment paper packet, being cautious of the steam, and transfer the chicken and veggies to a plate.
9. Serve hot and enjoy the delightful flavors of these parchment-baked fajita chicken!
