Tin Salmon & Citrus Pasta

With the arrival of spring, it’s time for vibrant, effortless, and flavorful meals suitable for any occasion. Here’s a zesty, aromatic, and approachable dish perfect for lunch, dinner, romantic evenings, or family gatherings!

  • Ingredients for 2 servings:

– 2 scallions, chopped
– 2 garlic cloves, grated
– ¼ teaspoon red chili flakes, adjust to taste
– 4 tablespoons olive oil
– 1 tablespoon capers
– 2 ½ oz Boursin cheese (any flavor of your choice)
– 4 oz dry spaghetti
– ½ cup dry white wine
– 1 teaspoon whole-grain mustard
– Zest and juice of ½ lemon
– Kosher salt, to taste
– Freshly ground black pepper, to taste
– 1 (6-ounce) can of salmon
– ¼ cup fresh parsley, roughly chopped
– ¼ cup fresh dill, roughly chopped

  • Preparation:

1. In a large stainless steel pan, gently sweat the chopped scallions, grated garlic, and red chili flakes in olive oil over medium-low heat until softened.

2. Stir in the capers and Boursin cheese until melted, creating a creamy sauce.

3. Meanwhile, bring a large pot of salted water to a boil. Cook the spaghetti according to the package directions. Reserve 1 cup of cooking water, then drain the spaghetti and set it aside.

4. Deglaze the cheese sauce with the white wine, increase the heat to medium, and cook for 1 minute. Add the whole-grain mustard, lemon zest, and lemon juice. Season with salt and pepper. Reduce the heat to medium-low and gently simmer the sauce until it’s reduced and slightly thickened.

5. Add the cooked pasta to the sauce, along with some reserved pasta water, a little at a time, until the sauce reaches the desired consistency.

6. Turn off the heat and gently fold in the flaked salmon, chopped parsley, and dill.

7. Serve immediately and enjoy the tantalizing flavors!

Feel free to adjust the seasoning and garnish with extra herbs or a sprinkle of Parmesan cheese if desired.
