Air Fryer Chicken Parmigiana

Crispy, Cheesy, and Oh-So-Easy!

Air Fryer Chicken Parmigiana is the dinner of your dreams! Whether you’re a busy parent or just love easy, delicious meals, this recipe is a MUST-TRY. Ready in just 20 minutes with less oil but ALL the flavor!

Ingredients:

For the tomato sauce:

  • 1 small garlic clove, sliced
  • ½ onion, thinly sliced
  • 1 small carrot, peeled, halved lengthwise, and thinly sliced
  • 100g/3½oz cherry tomatoes, halved
  • Olive oil spray
  • 1 basil sprig (or small handful basil leaves)
  • Salt and freshly ground black pepper

For the chicken:

  • 2 chicken breasts
  • 1 large free-range egg, beaten
  • 50g/1¾oz panko breadcrumbs
  • 15g/½oz Parmesan, finely grated
  • 50g/1¾oz mozzarella, sliced
  • Small handful parsley leaves, roughly chopped, to garnish

Method:

  1. Tomato Sauce: Heat the air fryer to 200°C. In a heatproof tray or bowl, mix the garlic, onion, carrot, and cherry tomatoes. Spray with olive oil, season with salt and pepper, and cook for 8–10 minutes until soft. Blend with basil until smooth. Set aside.
  2. Chicken: Lay the chicken breasts between two sheets of baking paper and pound until about 2cm/¾in thick.
  3. Heat the air fryer to 205°C. Dip the chicken in beaten egg, then coat with panko breadcrumbs mixed with most of the Parmesan.
  4. Cook the chicken in the air fryer for 10 minutes, turning after 6 minutes, until golden and cooked through.
  5. Top each breast with the tomato sauce, mozzarella, and a sprinkle of reserved Parmesan. Return to the air fryer for 3 minutes to melt the cheese.
  6. Garnish with parsley and serve hot with pasta or a crisp green salad.
