These easy and fluffy banana pancakes are perfect for a quick breakfast or brunch. They’re made with just a few wholesome ingredients and are naturally sweetened by ripe bananas.

Ingredients:

  • 2 ripe bananas
  • 1 egg
  • 200-250 grams Greek yogurt (plain, without additives)
  • 1 teaspoon baking powder
  • 3-4 tablespoons rice flour or wheat flour
  • Oil for cooking

Instructions:

  1. Prepare the Bananas: Mash the bananas with a fork until they are smooth and resemble a thick puree.
  2. Mix Ingredients: In a bowl, combine the mashed bananas and the egg. Mix well. Add the Greek yogurt and stir until incorporated.
  3. Add Dry Ingredients: Sprinkle the baking powder over the mixture and stir. Gradually add the rice flour or wheat flour, mixing until the batter reaches a thick sour cream-like consistency. If the batter is too thick, you can add a little more yogurt to adjust the consistency.
  4. Heat the Pan: Brush a non-stick skillet or frying pan with a little oil and heat it over medium heat.
  5. Cook Pancakes: Spoon the batter onto the pan to form pancakes. Cook for 2-3 minutes on each side or until golden brown and cooked through. The pancakes should be easy to flip when bubbles form on the surface.
  6. Serve: Serve warm with your favorite toppings such as fresh fruit, honey, maple syrup, or a dollop of yogurt.

Tips:

  • For extra flavor, you can add a pinch of cinnamon or a splash of vanilla extract to the batter.
  • If you prefer, you can use whole wheat flour for a slightly denser texture and added nutrients.
