  • 2 free-range eggs
  • Freshly ground black pepper
  • 1 tsp freshly chopped parsley
  • 1 tortilla wrap

Method:

  1. Cook Veggies:
    • Heat a non-stick frying pan and add the peppers and mushrooms.
    • Fry until softened, then add spinach and paprika. (Use a little oil or cooking spray if needed.)
  2. Scramble Eggs:
    • Crack in the eggs and scramble with the veggies.
