Indulge in the savory elegance of these Golden French Onion Potato Cheese Cups. Tender russet potatoes are hollowed out and filled with a rich caramelized onion soup, then topped with creamy mashed potatoes and gooey gruyere cheese. Baked until golden and bubbling, these delectable cups are a delightful fusion of flavors and textures, perfect for any occasion.

  • Ingredients for 4 servings:

– 4 russet potatoes
– 4 tablespoons unsalted butter, plus extra for flavor
– ¾ teaspoon kosher salt, plus more to taste
– 3 large yellow onions
– 2 teaspoons all-purpose flour
– ½ cup dry white wine
– 1 fresh thyme sprig
– 2 cups warm beef broth
– ½ teaspoon freshly ground black pepper, plus more to taste
– 1 ½ cups grated gruyere cheese

  • Preparation:

1. Preheat and Prepare: Preheat the oven to 400˚F (200˚C). Wash the potatoes and dry them. Poke the potatoes with a fork in several places and place them on a baking sheet. Bake for 60-75 minutes until fork-tender. Let them cool.

2. Scoop and Mash: Slice the potatoes in half lengthwise and scoop out the flesh into a large bowl, leaving about ¼-inch in the shell. Mash the potatoes until smooth. Add butter to taste and season with salt. Set aside the mashed potatoes and potato shells. Switch on the oven’s broiler.

3. Caramelize Onions: In a Dutch oven, melt 4 tablespoons of butter over medium heat. Add onions and ¾ teaspoon salt. Cook, stirring occasionally, until onions caramelize to golden brown, about 30-45 minutes.

4. Prepare Onion Soup: Add flour and cook for 3 minutes. Deglaze the pot with wine, bringing it to a boil. Let the mixture thicken. Add thyme. Slowly pour in warm broth and let it boil uncovered for 10 minutes until reduced by half. Season with salt and pepper.

5. Assemble and Bake: Arrange potato shells on a baking sheet. Ladle onion soup into the potato shells and cover with mashed potatoes. Sprinkle generously with cheese. Broil for 1-2 minutes until the cheese melts and browns. Serve hot.
