Egg Fried Rice

A Quick and Easy Weeknight Meal

Ever stare into the fridge on a busy weeknight, willing a delicious dinner to appear? Fear not, the magic of egg fried rice is here to save you! This recipe is not only quick and easy, but it’s also endlessly customizable.

Gather your ingredients:

  • 3 cups of leftover cooked white rice (the drier the better!)
  • 2 tablespoons of your favorite cooking oil
  • 2 eggs, whisked until they look like sunshine
  • 1 cup of mixed veggies, diced and ready to party (think peas, carrots, corn, or whatever you have on hand)
  • 2 cloves of garlic, minced (more if you’re feeling adventurous)
  • 2 scallions, chopped (green parts too, for that extra pop of color)
  • 3 tablespoons of soy sauce – the salty kind!
  • 1 tablespoon of sesame oil (optional, but oh-so-worth-it for a nutty depth)
  • Salt and pepper to taste (because who wants bland rice?)
  • Chopped fresh cilantro or sliced scallions for garnish (optional, but pretty)

Let’s get cooking!

  1. Heat up your pan or wok over medium-high heat. Add a tablespoon of oil, then swirl it around to coat the bottom.
  2. Pour in your whisked eggs and scramble them until they’re just set. Don’t worry about perfect eggs – fluffy scrambles are welcome here! Once cooked, set them aside in a bowl.
  3. In the same pan, add another tablespoon of oil. Toss in your garlic and chopped scallions, and let them sizzle and release their amazing aroma for a minute or two.

  7. Remember those scrambled eggs? Add them back to the pan and stir-fry everything together until it’s beautifully combined.
  8. Now comes the fun part: tasting! Season with salt and pepper to your heart’s content. Don’t be shy – adjust the soy sauce or add more spices if you like it bolder.
