Ingredients:
- 2 tbsp vegetable or sunflower oil
- 1 tsp cumin seeds
- 1 onion, thinly sliced
- 2 x 400g tins mixed beans in water, drained and rinsed
- ½–1 tsp dried chili flakes (to taste)
- 1 tsp ground cumin
- ½ tsp salt
- 300g/10½oz long-grain rice
- 900ml/1½ pints boiling water
- Handful of fresh soft herbs (such as coriander, parsley, or mint), finely chopped + a few sprigs for garnish
Method:
- Sizzle the Cumin:
- Heat oil in a large saucepan and add cumin seeds. Once they start to sizzle, toss in the sliced onion and cook for about 5 minutes until softened.
- Add Beans & Spices:
- Stir in the drained beans and cook for a couple of minutes. Add the salt, chili flakes, and ground cumin. Let the spices cook for a few seconds to release their flavors.
- Cook the Rice:
- Mix in the rice and boiling water. Bring to a boil, cover with a lid or kitchen foil, and cook on low heat for 15 minutes, stirring occasionally.
- Herb It Up:
- After 10 minutes of cooking, add the finely chopped herbs. Continue to cook until the rice is tender. If needed, add a splash more water.
- Serve & Garnish:
- Fluff up the rice, serve hot, and top with the reserved herb sprigs.
