Budget-Friendly Beans Pulao

Ingredients:

  • 2 tbsp vegetable or sunflower oil
  • 1 tsp cumin seeds
  • 1 onion, thinly sliced
  • 2 x 400g tins mixed beans in water, drained and rinsed
  • ½–1 tsp dried chili flakes (to taste)
  • 1 tsp ground cumin
  • ½ tsp salt
  • 300g/10½oz long-grain rice
  • 900ml/1½ pints boiling water
  • Handful of fresh soft herbs (such as coriander, parsley, or mint), finely chopped + a few sprigs for garnish

Method:

  1. Sizzle the Cumin:
    • Heat oil in a large saucepan and add cumin seeds. Once they start to sizzle, toss in the sliced onion and cook for about 5 minutes until softened.
  2. Add Beans & Spices:
    • Stir in the drained beans and cook for a couple of minutes. Add the salt, chili flakes, and ground cumin. Let the spices cook for a few seconds to release their flavors.
  3. Cook the Rice:
    • Mix in the rice and boiling water. Bring to a boil, cover with a lid or kitchen foil, and cook on low heat for 15 minutes, stirring occasionally.
  4. Herb It Up:
    • After 10 minutes of cooking, add the finely chopped herbs. Continue to cook until the rice is tender. If needed, add a splash more water.
  5. Serve & Garnish:
    • Fluff up the rice, serve hot, and top with the reserved herb sprigs.
