Veggie Fritters with Lemony Cucumber Dip

Ingredients:
For the Lemony Cucumber Dip:
- ⅓ cucumber, grated
- 6 tbsp yogurt
- ½ garlic clove, crushed
- ½ lemon, finely grated zest (optional)
For the Fritters:
- 1 large free-range egg
- 50g/1¾oz self-raising flour
- 150g/5½oz butternut squash, grated
- 198g tin sweetcorn, drained
- 2 spring onions, trimmed and finely sliced
- 4 tbsp oil (olive, sunflower, or vegetable)
- Salt and freshly ground black pepper
Method:
- Make the Dip:
- Combine grated cucumber, yogurt, crushed garlic, and lemon zest (if using) in a small bowl. Mix well.
- Prepare the Fritters:
- In a large bowl, whisk together the egg and flour. Add grated butternut squash, sweetcorn, and spring onions. Season with salt and pepper.
- Cook the Fritters:
- Heat 2 tbsp oil in a non-stick frying pan over medium heat. Drop spoonfuls of batter into the pan, spreading them with the back of the spoon. Cook for about 3 minutes on each side until golden and crispy. Transfer to a plate lined with kitchen paper. Repeat with remaining batter, adding more oil if needed.

- Enjoy the fritters hot, served with the lemony cucumber dip on the side.
