Veggie Fritters with Lemony Cucumber Dip

Ingredients:

For the Lemony Cucumber Dip:

  • ⅓ cucumber, grated
  • 6 tbsp yogurt
  • ½ garlic clove, crushed
  • ½ lemon, finely grated zest (optional)

For the Fritters:

  • 1 large free-range egg
  • 50g/1¾oz self-raising flour
  • 150g/5½oz butternut squash, grated
  • 198g tin sweetcorn, drained
  • 2 spring onions, trimmed and finely sliced
  • 4 tbsp oil (olive, sunflower, or vegetable)
  • Salt and freshly ground black pepper

Method:

  1. Make the Dip:
    • Combine grated cucumber, yogurt, crushed garlic, and lemon zest (if using) in a small bowl. Mix well.
  2. Prepare the Fritters:
    • In a large bowl, whisk together the egg and flour. Add grated butternut squash, sweetcorn, and spring onions. Season with salt and pepper.
  3. Cook the Fritters:
    • Heat 2 tbsp oil in a non-stick frying pan over medium heat. Drop spoonfuls of batter into the pan, spreading them with the back of the spoon. Cook for about 3 minutes on each side until golden and crispy. Transfer to a plate lined with kitchen paper. Repeat with remaining batter, adding more oil if needed.
  4. Serve:
    • Enjoy the fritters hot, served with the lemony cucumber dip on the side.
