Easy Mushroom Stroganoff

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 500g/1lb 2oz mushrooms (any mix you like), cleaned and sliced
  • ½ tsp English mustard
  • 1 tsp paprika
  • 250ml/9fl oz vegetable stock (from a stock cube)
  • 200g/7oz rice
  • 200ml/7fl oz soured cream
  • 1 lemon, cut into wedges
  • Salt and freshly ground black pepper

Method:

  1. Cook the Base:
    • Heat olive oil in a pan, add onion with a pinch of salt, and cook gently for 5–7 minutes until soft. Add garlic and cook for 2 minutes.
  2. Add Mushrooms & Spices:
    • Stir in mushrooms and cook for 5–6 minutes until tender and golden. Mix in mustard and paprika, then pour in the vegetable stock. Simmer for 5 minutes.
  3. Cook Rice:
    • Cook rice according to packet instructions.
  4. Finish Stroganoff:
    • Stir soured cream into the mushrooms, add juice from two lemon wedges, and season with salt and pepper. Serve with rice and remaining lemon wedges on the side.
