Ingredients:

  • 200g/7oz red lentils
  • 2 sweet potatoes, peeled and diced
  • 1 tsp ground turmeric
  • 1 litre/1¾ pints hot vegetable stock (made from 2 stock cubes)
  • 100g/3½oz spinach
  • 2 tbsp sunflower oil
  • 2 tsp cumin seeds
  • 1 tsp crushed chillies
  • Salt and freshly ground black pepper
  • 1 lemon, cut into wedges (for serving)

Method:

  1. Prep & Cook:
    • In a large microwavable bowl, combine the lentils, sweet potatoes, turmeric, and a pinch of salt. Stir in the hot stock, cover, and microwave on high for 15 minutes, or until the lentils are tender.
    • Stir in the spinach and let it sit for 4–5 minutes to wilt.
  2. Make the Spiced Oil:
    • In a small microwavable bowl, combine the sunflower oil, cumin seeds, and crushed chillies. Cover and microwave on high for 2 minutes, or until fragrant.
  3. Finish & Serve:
    • Stir the dal and season with salt and pepper. Spoon over the spiced oil and serve with lemon wedges for a zesty finish.
