Save time and energy with this delicious Microwave Chicken Pilaf! Ready in less than 20 minutes, it’s the perfect weeknight meal that doesn’t skimp on flavor. Fragrant basmati rice, tender chicken, and vibrant veggies come together in this speedy, one-bowl wonder. ️

Ingredients:

  • 300–320g/10½–11½oz chicken breast mini fillets, diced
  • Bunch of spring onions, finely sliced (separate green and white parts)
  • 2 garlic cloves, finely chopped
  • 2 tbsp sunflower oil
  • 300g/10½oz basmati rice
  • 1 tsp ground cumin
  • 1 tsp crushed chillies
  • 750ml/1¼ pints hot chicken stock (from a stock cube)
  • 1 large carrot, peeled and coarsely grated
  • 250g/9oz frozen garden peas
  • Fresh coriander leaves, to garnish

Method:

  1. Mix & Microwave:
    Combine the diced chicken, white spring onions, garlic, oil, rice, cumin, and crushed chillies in a large microwavable bowl. Stir until the rice is coated in oil. Pour in the hot chicken stock, cover, and microwave on high for 12 minutes, stirring halfway.
  2. Add Veggies:
    Stir in the grated carrot, peas, and green spring onions. Microwave for an additional 3 minutes.
  3. Finish & Serve:
    Let the pilaf stand for 2 minutes to absorb any remaining stock. Garnish with fresh coriander leaves and serve hot!
